Apple Pie Overnight Oats

Serves 2 // Easy // Low Carbon Score - B Rated

Ingredients:  

  • 2 Tbsps. (50 ml) Maple Syrup

  • 2 Tbsps. (32g) Almond Butter

  • 1 Cooking Apple (150g cored), peeled and chopped

  • 80g Porridge Oats

  • 180ml Whole Milk

  • 1 Tbsp. (10g) Chia Seeds

  • 2 Tsp. (3g) Ground Cinnamon

  • 1 Tsp. (5ml) Vanilla Essence

Method:

  1. To a saucepan add chopped apples, cinnamon and 1/2 the maple syrup, mix to evenly distribute.

  2. Cook on medium heat, stirring occasionally, for about 10 minutes or until the apples are soft and tender.

  3. In a bowl, mix the milk, chia seeds, remaining maple syrup, cinnamon, almond butter, vanilla and oats until well-combined.

  4. Layer the apple mixture followed by the oats until divided between all containers and topping off with apple.

  5. Refrigerate overnight.
