Health For Stealth Brownie
Ingredients:
290g Caster Sugar
3 Eggs
165g Dark Chocolate
200g Butter
35g Plain Flour
35g Coffee Grounds
55g Cocoa
1 Tsp. Baking Powder
Method:
Preheat the oven to 165°c. Line a flat baking tray with parchment paper.
Whisk the sugar and eggs together until light and fluffy. Melt the chocolate and butter in a heatproof bowl over boiling water, stirring frequently.
When the chocolate is fully melted and incorporated with the butter, remove from the heat and allow to cool slightly.
Gently fold the chocolate mixture into the eggs being as gentle as possible. Now fold the sieved flour, cocoa, baking powder then add the coffee grounds, again being as gentle as possible and making sure there are no lumps of flour.
Pour the batter into the baking tray and bake for 30-35 minutes (the centre should still be slightly moist).
Remove from oven and allow to cool to room temperature in the tray. Place into the fridge until set.
Remove from tray and portion.
