Spiced Chickpea Burgers

Serves 4 // Easy // Low Carbon Score - A Rated

Ingredients:  

  • Couscous (100g or 1/2 a cup)

  • 1 Tin Chickpeas (400g)

  • 1 Onion, chopped

  • 1 Tsp. Garlic Puree

  • Handful Cashew nuts (50g), chopped

  • Handful Fresh Parsley, stalks removed

  • ½ Tsp. Ground Cumin

  • 1 Tsp. Oil

  • Salt & Pepper to taste

    Method: 

  1. Cook the couscous as per packet instructions.

  2. Drain the chickpeas and mash using a fork.

  3. Heat half the oil in a pan, add the onions and cook until translucent, add the garlic puree and cook for a further 30 seconds.

  4. Drain the couscous to ensure no water remains.

  5. Add all ingredients to a food processor, and whizz to a course paste.

  6. Using wet hands, shape the mix into 4 burgers.

  7. Cook gently in the remaining oil for 3 -4 minutes each side or bake in the oven until crispy.
