Spiced Chickpea Burgers
Ingredients:
Couscous (100g or 1/2 a cup)
1 Tin Chickpeas (400g)
1 Onion, chopped
1 Tsp. Garlic Puree
Handful Cashew nuts (50g), chopped
Handful Fresh Parsley, stalks removed
½ Tsp. Ground Cumin
1 Tsp. Oil
Salt & Pepper to taste
Method:
Cook the couscous as per packet instructions.
Drain the chickpeas and mash using a fork.
Heat half the oil in a pan, add the onions and cook until translucent, add the garlic puree and cook for a further 30 seconds.
Drain the couscous to ensure no water remains.
Add all ingredients to a food processor, and whizz to a course paste.
Using wet hands, shape the mix into 4 burgers.
Cook gently in the remaining oil for 3 -4 minutes each side or bake in the oven until crispy.
