Fresh ground ginger3 Garlic cloves 3 Medium Sweet potatoes, peeled 1 Large Carrot , peeled and chopped1 Large Onion, diced 1 Medium Potato, peeled 800ml Vegetable stock Season with salt and pepper Fresh herbs of choice (to garnish)Method:Heat the oil in a suitable pan, sweat the vegetables off with the ginger and garlic for 3-4 minutes.Add the vegetable stock and bring to the boil.Simmer until all the vegetables are tender.Remove from heat and blend into a smooth soup.Season to taste, garnish with herbs and serve.
