Sweet Potato and Ginger Soup

Serves 4.

Easy.

Cooking and preparation time: 40 minutes 

Ingredients:

  • 1 Tbsp. Oil

  • 1 Tbsp. Fresh ground ginger

  • 3 Garlic cloves

  • 3 Medium Sweet potatoes, peeled

  • 1 Large Carrot , peeled and chopped

  • 1 Large Onion, diced

  • 1 Medium Potato, peeled

  • 800ml Vegetable stock

  • Season with salt and pepper 

  • Fresh herbs of choice (to garnish)

Method:

  1. Heat the oil in a suitable pan, sweat the vegetables off with the ginger and garlic for 3-4 minutes.

  2. Add the vegetable stock and bring to the boil.

  3. Simmer until all the vegetables are tender.

  4. Remove from heat and blend into a smooth soup.

  5. Season to taste, garnish with herbs and serve.
