Thai Chilli Basil Chicken

Serves 4 // Cooking Time: 25 minutes

Ingredients:

2 Tbsp. Light Soy Sauce

2 Tbsp. Dark Soy Sauce

4 Tbsp. Oyster Sauce

2 Tbsp. Caster Sugar

1.5 Tbsp. Olive Oil

3 Chicken Fillets (Diced)

2 Fresh Chillies (Finely Chopped)

2 Cloves Garlic (Finely Chopped)

5 Scallions (Finely Chopped)

1 Medium White Onion (Sliced)

80g Fresh Basil

300g Brown Rice

Method:

  1. 1.     To make the sauce, mix both soy sauces, oyster sauce, caster sugar and 250ml water. Stir continuously until everything is mixed in and set aside.

    2.     Add the brown rice to a pot of boiling water. Cook for approximately 30 minutes or until cooked throughout, stirring occasionally.

    3.     While the rice cooks, heat the olive oil in a wok over a medium heat.

    4.     Fry off the onion for 3-4 minutes or until translucent. Add the garlic and chilli and fry off for a further minute.

    5.     Add the chicken and increase the heat to medium-high. Fry the chicken, stirring frequently, until it is browned on all sides and fully cooked.

    6.     Once the chicken is cooked through, add the sauce you made earlier and chopped scallions.

    7.     Add most of the basil and stir through.

    8.     Serve with brown rice and garish with the remaining basil.
