Carrot Cake Granola Bar

Cooking and preparation time: 55 minutes

Ingredients:

  • 350g Oats

  • 2 Tsp. Mixed Spice

  • 125g Walnuts, roughly chopped

  • 1 Large Carrot, peeled and grated

  • 75g Butter

  • 60g Honey

  • 100g Sultanas

Method:

  1. Heat oven to 180C.

  2. Melted unsalted butter and honey.

  3. Toss together the oats with the mixed spice, roughly chopped walnuts, sultanas and grated carrot (squeeze out excess water).

  4. Add to hot butter and honey, mix well.

  5. Place in greaseproof tray and bake for 30-40mins.

  6. Allow to cool, cut into squares.
