Smoked Paprika and Butterbean Hummus

Serves 4.

Easy.

Cooking and preparation time: 1 hour, 20 minutes

Ingredients:

  • 1 tin Butterbeans

  • 25g Tahini paste

  • 1 Tbsp. Smoked paprika

  • 1 Small Onion

  • 2 Garlic Cloves

  • 1/2 Tsp. Lemon zest

  • 35ml Extra virgin olive oil

  • Seasoning, salt and pepper

Method:

  1. In a pan over a medium heat, add half of the olive oil and sweat off the onions with the smoked paprika, until the onions are soft and golden.

  2. Remove from the heat and allow to cool.

  3. In a food processor or blender, add the drained butter beans, garlic, lemon zest, tahini paste and seasoning, with the rest of the olive oil and the cooled onion.

  4. Blend until smooth, taste and adjust seasoning as necessary.

  5. Chill in the fridge for at least an hour.
