Quinoa and Peanut Energy Bites

Makes 10 balls- serve 2 per person.

Ingredients:

·       100g Porridge Oats

·       100g Cooked White Quinoa

·       60g Dried Apricots

·       80g Smooth Peanut Butter

·       60g Dried Cranberries

·       40ml Water


Method:

1.       Blend the oats in a food processor until smooth.

2.       Remove the oats and put to one side in a bowl.

3.       Add the cooked quinoa, dried apricots, dried cranberries, smooth peanut butter and water into the food processor and blend until they form a paste.

4.       Add the oats to the paste and mix well until combined.

5.       Place the mixture in the fridge for 1 hour.

6.       Remove from the fridge and shape into bite sized balls.

7.       Store in the fridge until ready to eat and enjoy!
