Chocolate Orange Mousse
Method:
Grate the orange and further chop the peel until reduced to small bits.
Place a bowl over a pot with boiling water, and add chocolate, orange peel and coffee.
Let chocolate melt while continuously mixing the ingredients. Once melted, remove the bowl from the heat and let it cool on the side.
Whip the egg whites with a pinch of salt.
Add the egg yolks to the lukewarm melted chocolate. Pour the mix into the whipped egg whites, and slowly combine them with a fork.
Pour the mousse into a large serving bowl or into small serving glasses. Leave the mousse to rest in the fridge for 6 hours.
