Five Bean Cassoulet and Sage Soup

Easy.

Cooking and preparation time: 40 minutes 

Ingredients:

  • 400ml Veg Stock

  • 40g Tomato Puree

  • 1 Tin Chopped Tomatoes

  • 60g Red Onions, finely diced

  • 30g Leeks, sliced

  • 30g Red Pepper, finely diced

  • 1 Tin Five Bean Salad (in water) 

  • 80g Fine Beans

  • Fresh Sage 

  • Handful Fresh Basil 

  • Salt and pepper 

Method:

  1. Place the vegetable stock, tomato puree, chopped tomatoes, onions and leeks into a thick bottom saucepan. Bring to the boil and simmer for 25 minutes.

  2. Add the peppers, mixed beans, green beans, sage and basil to the soup and simmer for a further 10-15 minutes. Taste and adjust the seasoning as necessary. If necessary, loosen with a little more stock.

  3. Serve in deep bowls and top with a drizzle of olive oil.
